15-Minute Pasta Primavera

A quick and colorful vegetarian pasta dish perfect for busy weeknights.

Ingredients

  • 8 oz pasta of your choice
  • 1 cup mixed vegetables (e.g., bell peppers, zucchini, cherry tomatoes)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add mixed vegetables and cook for 3-4 minutes until tender-crisp.
  5. Drain pasta, reserving 1/4 cup of pasta water.
  6. Add pasta to the skillet with vegetables and toss to combine.
  7. Add reserved pasta water and Parmesan cheese, stirring until cheese is melted and pasta is coated.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh basil leaves.
